A photo of my first ever layer cake. This is a gluten-free carrot cake. My husband helped me with the lemon icing and the lemon zest. The lemons we used came from my dad's lemon tree. The cake was incredibly moist and did not give away that it was made without gluten.

The general consensus was that it would be worth the money if this was served in a café so I'm pretty happy!

Looks so good! And gluten free too? Awesome. My mom LOVES carrot cake. And we have lemon trees too! What kind of flour did you use? That icing looks so good, I just want to lick it right off. :heart:

Thanks for the comment! I'll send you a link to some gluten-free flour options and the original online recipe for this carrot cake. Unfortunately I think a lot of the chemistry of baking gluten-free comes from trying so hard to make something that's similar to recipes with normal flour in them. I'm not a big fan of that approach, I just want things that go on my plate and taste great!

Thanks for the links! :meow: Oh yeah, definitely if something's going to be homemade (with love!) I'd hope it tasted great! I really like your approach where rather than finding substitutes, you find things that usually happen to also be gluten free. YUMMY! (and if it's the former, it looks like you've had great luck with making them tasty!)

Thanks! It tastes pretty good too. Unfortunately we have to give away most of it because we are on a self-imposed diet even while I'm practicing my baking and this cake is big! The layers are 23cm/9in in diameter.
